Roast Chicken
Ingredients
- One bird
- Zest and juice of one lemon
- 1 tsp Fresh rosemary
- 1 tsp Fresh thyme
- Salt & pepper
- 1 Tbsp olive oil
- One onion, quartered
- 4 cloves garlic, peeled
- One celery stalks cut into one inch pieces
- One carrot, peeled and cut into one inch pieces
- Baby potatoes, one cup
Method
Rub bird with olive oil, lemon zest, fresh rosemary, salt & pepper. Toss everything into cast iron pan, place chicken on top, pop into oven for approximately 1 hour and 30 minutes at 400 degrees. Roast until juices from chicken run clear. Baste occasionally with pan juices.
